recipes call for Cajun style, but capers, butter and lemon create another delicious, complimentary flavor profile. Alligator Tenderloins are a great addition to a traditional gumbo recipe as well! We prefer to poach the tenderloins, and let them cool, then shred the meat by hand. Once the gumbo is done simmering, we add the meat back in. Another bonus about this meat is that it's not only tasty and versatile, but virtually fat free and high in protein. You can feel good about enjoying your meal as well!
Our Alligator Tenderloins come from the tail, and are sourced from sustainable farms in Louisiana. There, the animals are well-cared for and fed a lean, high protein diet.
